Fall into soup

I'm not cooking anything new and fantastic this week, but I'm making an old winter standby.  This is beef and barley soup.  Slow cooked for about 2 hours.  It's delicious and incredibly filled.
I'm about 1/2 through.  I was running late for a lunch date so I put the soup mix back in the fridge until I can finish making it tonight.

I went on a beautiful lunch date at Sala Thai here in Windsor.  I love the atmosphere and the smells of Thai food.  It's especially inviting in the cooler weather.  It's in the 40's today in Colorado.  I had Tom Ka as an appetizer and the panang curry with tofu and brown rice as my entree.  Since I didn't eat breakfast, I ate it all.  Yum!  or Tom Yum.

Loading up on lunches and dinners

The pulled pork turned out really good.   I enjoyed how easy it was using the crock pot.  I have at least enough for the rest of the week.
I used the over today to cook a spaghetti squash, 5 potatoes, and some tofu for a broccoli and tofu salad with udon noodles.   I split up the spaghetti squash into 3 containers to add marinara sauce.  I put the potatoes in the fridge for potato soup and a baked potato with broccoli.   So I have quite of few meals for the next week.   I also have carrots, pears, cottage cheese and pumpkins seeds to round out my meals.  I hope this will last me for the rest of week without getting sick of leftovers.  I also used the oven to cook three items so I hope I won't have to turn it on the rest of the week.

So,  I made the pulled pork all day with my crock and no fire started!  Surprise. Surprise!  I even left the apartment for 2 full hours.  It didn't boil over.  Very happy with the results.  I put the pulled pork in the freezer for future dinners.  I hope to save some money and make dinners this way once a week.   The crock pot is not THAT scary.

New experiences

I have a confession to make.  I have never really used a crock pot.   They scare me for some reason.  I don't see how things can cook well for 8 hours.  Also it seems dangerous to have something cooking cooking all day in the house without someone tending to it.  I took my pot out of the closet today.  Pulled pork sandwiches.

1.25lb pork loin
one medium onion
2 cloves of garlic
1 t of Stubbs bbq spice rub
Water to fill crock pot

It's been cooking for 4.5 hours.  I'll let you know how it goes.

Green lentil dal

I was craving some Indian spices today so I decided to try a delicous vegetarian dish.   I have had lentils at Indian restaurants several times.   It has so many delicious flavors and spices that I don't miss the meat.

2 Cups of water
1 cup of dried green lentils
2 carrots
1 celery stick
1/2 cup of chopped onion
1 garlic clove
1/2 t of garam masala
1/2 t of dried coriander
1/4 t of turmeric
salt and pepper to taste

Boil the lentils for about 20 minutes until tender.  Meanwhile saute carrots, celery and onion for 7 minutes in olive oil, add garlic and saute for 1 minute.  Mix in spices to vegetables.   Add lentils and cook for an additional 5 or 10 minutes.
